Take medium size 3 to 4 Bitter gourd / Karela, Scrap and give a slit on one side of it and scoop out soft part of it. Rub little salt on Karela and on scrap too. Take 1 tbsp of mustard oil in a pan, add 3 to 4 medium size finely chopped onions sauté scrapped bitter gourd skin with it till pink in colour.

Mix 1 tbsp of finely chopped Ginger and 2 tbsp of coriander, Add 3 to 4 tbsp of “The Spice Chef Karela Masala” and mix well, remove it from the heat. Cool it for some time. Fill this mixture inside Bitter gourd and tie up with a kitchen thread so Masala will not come out.

Take a sauce pan add 2 to 3 tbsp of Mustard oil heat it properly then add Filled Bitter gourd, sauté it till golden brown. Gives Excellent Taste with Roti. You can also use it for cut karela subji. Karela masala taste good with Lady finger or small brinjals.
